Strawberry & Szechuan Pepper Bubbles

Cocktail maestro Ollie of Madam Woo (and Rata) extraction, shares his glorious recipe for maybe the most refreshing drink ever.  Versions of this have also graced the menus of both Madam Woo and Rata.  Obviously better to be there but to tide you over, here goes. 


500g frozen strawberries

2 cups sugar (caster if you have it)

2 cups water

1/2 cup fresh lime juice

Good handful of szechuan pepper

3 dried chillies


Take all the above, place it in a pot and boil it until it resembles a liquid.  

Let it cool.

Fine strain it and serve in a tall glass packed with ice and mint. Top with soda.
